Sizing
Sizing an ice machine can require many different perspectives depending on what you are selling now compared to what you may be selling later. Of course you want to oversize your machine by about 50% for the amount of business you plan to average after opening your doors. But then you want to include some possibilities for expansion in the future, if expansion or special events will play a big part in that future than sizing a machine to handle that now may save for costly additions, new ice machine equipment and repurchase of larger filtration units.
